Sweet-potato cream soup
Well, I finally made some home-made soup. After peeling and boiling the potatoes, I mashed them. Then I heated the vegetable stock, added salt, the potato puree, onion, thyme, garlic, and peppercorns. Brought it to a boil, reduced the heat and let it simmer for about 30 minutes. Then I pureed part of the soup with a blender. Mixed it all together again and brought it to a boil. I reduced the heat to low and added some heavy cream. Poured it into soup bowls and added some fresh parsley. It was delicious.
I am reading a great book right now, the author's name is Tahmima Anam - I cannot seem to be able to put it down...What are you reading right now?
